

– When they’re firm enough slice the logs into thin rounds. Roll the logs on the remaining chopped cashews to coat them. – Roll the dough in cylinders/logs in sizer you prefer. Using a small ice cream scoop, scoop them onto a cookie sheet lined with parchment paper. Place it over medium/medium low heat, stirring the entire time. – Bring the dough together with your hands pressing gently until the dough is firm enough to roll into a ball. Add the chocolate and peanut butter morsels to a heavy bottom pan on the stove. – Add sugar and as much cashews as you want (leave some cashews to roll your cookie dough log in later)
